Jowl | Fresh (Pork)
Our Indiana grown non GMO and pastured kunekune pork jowls are a unique find! Jowls come from the cheek of the pig and kunekune are known for their huge jowls and thus our pork jowls are substantial in size compared to conventional pigs. We have left these fresh for you to do what you will with. This cut is usually brined or cured and then smoked for guanciale or bacon, but it can also be used in many Asian inspired recipes in the place of fresh pork belly. It is a great substitute for finding smaller portions of a fatty cut rather than seeking out whole sides of pork belly. This cut is also fun for those that have been inspired to try their hand with home curing and smoking. We have a fabulous recipe for home cured guanciale you can ask us for!
