In this 4-5 hour class students will learn the art of curing whole muscles at home and will see the different stages of the process.
Students will then learn how to create & cure their very own guanciale which they will take home and finish.
Students will learn how to create whipped lardo and will take home what is made.
Students will learn how to create sausage.
Students will go home with a workbook with recipes and instructions.
A farm to table lunch will be served.
